Rose Cardamom Protein Cookies
There is a reason cookies are one of the most popular desserts known. They’re small, easy to take with you, delicious, and you can make them in a wide variety of flavors. These Rose Cardamom Protein Cookies are a great treat for all ages.
Ingredients:
2 1/2 cups Almond Flour
1 cup Gluten Free Flour
1 cup Powdered Sugar
1/3 cup Vanilla Flavored Protein Powder
1/2 cup Unsalted Butter, softened
1/2 cup Coconut Oil
1 Egg
1/2 tsp Baking Powder
1/2 tsp Xanthan Gum
1/2 tsp Ground Cardamom
1 tsp Vanilla Extract
2 tsp Rose Water
1 tsp Almond Extract
*Optional - Rose Icing, Rose Petals, and/or Cardamom Pods for decorating the tops
Directions:
Mix together all dry ingredients.
Add in the wet ingredients and mix together until you have a smooth dough.
Place the dough on cling film and roll it into a log about 2 inches in diameter. Chill in the freezer for 20 minutes or in the fridge for 40.
Preheat the oven to 350 degrees F.
Remove the log and cut cookies. *You can also choose to roll out the dough and use a cookie cutter*
Place cookies on a baking sheet lined with parchment paper. Shape with your fingers if needed.
Bake for 10-20 minutes (depending on your oven and the thickness of the cookies, check every 5 minutes) or until the edges of the cookies are browned.
Remove from oven and let cool completely before handling.
*Optional: After cookies are cooled, drizzle with rose icing.
Rose Icing:
Mix together 1 cup powdered sugar, 1 teaspoon Rose water, 1 teaspoon distilled water, and 1/2 teaspoon Almond Extract.
