Rose Cardamom Protein Cookies

There is a reason cookies are one of the most popular desserts known. They’re small, easy to take with you, delicious, and you can make them in a wide variety of flavors. These Rose Cardamom Protein Cookies are a great treat for all ages.

Ingredients:

  • 2 1/2 cups Almond Flour

  • 1 cup Gluten Free Flour

  • 1 cup Powdered Sugar

  • 1/3 cup Vanilla Flavored Protein Powder

  • 1/2 cup Unsalted Butter, softened

  • 1/2 cup Coconut Oil

  • 1 Egg

  • 1/2 tsp Baking Powder

  • 1/2 tsp Xanthan Gum

  • 1/2 tsp Ground Cardamom

  • 1 tsp Vanilla Extract

  • 2 tsp Rose Water

  • 1 tsp Almond Extract

  • *Optional - Rose Icing, Rose Petals, and/or Cardamom Pods for decorating the tops

Directions:

  1. Mix together all dry ingredients.

  2. Add in the wet ingredients and mix together until you have a smooth dough.

  3. Place the dough on cling film and roll it into a log about 2 inches in diameter. Chill in the freezer for 20 minutes or in the fridge for 40.

  4. Preheat the oven to 350 degrees F.

  5. Remove the log and cut cookies. *You can also choose to roll out the dough and use a cookie cutter*

  6. Place cookies on a baking sheet lined with parchment paper. Shape with your fingers if needed.

  7. Bake for 10-20 minutes (depending on your oven and the thickness of the cookies, check every 5 minutes) or until the edges of the cookies are browned.

  8. Remove from oven and let cool completely before handling.

  9. *Optional: After cookies are cooled, drizzle with rose icing.

Rose Icing:

  1. Mix together 1 cup powdered sugar, 1 teaspoon Rose water, 1 teaspoon distilled water, and 1/2 teaspoon Almond Extract.
