Cranberry Salsa
I’m always looking for new twists on old favorites, and this is one that I came across several years ago that has become a Holiday staple for our family. I make it for gatherings this time of year, and it’s always a hit. I personally like this with goat cheese, but it also is great with just plain tortillas and you can serve it any way you can serve regular salsa.
Ingredients:
1 (12-ounce) bag Fresh Cranberries
¾ cup Sugar, Honey, or Maple Syrup
½ cup Water
1 (or more) Jalapeño or Habanero, seeded and diced
¼ cup Green Onion, diced
1 tbsp Lime Juice (or more to taste)
½ tsp Salt
¼ tsp Cumin, ground
¼ cup Fresh Cilantro, chopped
Directions:
Combine water and sugar in a medium saucepan. Bring to a boil over medium heat.
Add cranberries and return to a boil. Gently boil cranberries for 10 minutes without stirring.
Pour into a medium mixing bowl. Gently stir in remaining ingredients while cranberries are still warm.
Cool at room temperature and refrigerate. Best if served at room temperature.
