Carrot Cake Overnight Oats

Healthy food doesn’t have to be bland. So why not make a healthy alternative to one of my favorite desserts? This recipe mashes carrot cake with overnight oats to create a delightfully unique and nutrient-rich breakfast. Give it a try!

Ingredients:

  • ½ cup Old-Fashioned Rolled Oats

  • ¼ cup grated Carrots

  • ½ cup Almond Milk

  • 1 Tablespoon Almond Butter

  • 1 tablespoon Chia Seeds

  • 1-2 Tablespoons Maple Syrup

  • 1 teaspoon Vanilla Extract

  • ½ teaspoon ground Cinnamon

  • a dash each of ground Nutmeg, Allspice, and Ginger

  • pinch of Sea Salt

  • ⅛ cup dried Raisins


Directions:

  1. In an 8- to 12-ounce jar, combine all the ingredients. Cover and refrigerate for at least 4 hours or up to 3 days.

  2. Serve chilled, topped with pecans, walnuts, grated carrot, and/or raisins.
