Carrot Cake Overnight Oats
Healthy food doesn’t have to be bland. So why not make a healthy alternative to one of my favorite desserts? This recipe mashes carrot cake with overnight oats to create a delightfully unique and nutrient-rich breakfast. Give it a try!
Ingredients:
½ cup Old-Fashioned Rolled Oats
¼ cup grated Carrots
½ cup Almond Milk
1 Tablespoon Almond Butter
1 tablespoon Chia Seeds
1-2 Tablespoons Maple Syrup
1 teaspoon Vanilla Extract
½ teaspoon ground Cinnamon
a dash each of ground Nutmeg, Allspice, and Ginger
pinch of Sea Salt
⅛ cup dried Raisins
Directions:
In an 8- to 12-ounce jar, combine all the ingredients. Cover and refrigerate for at least 4 hours or up to 3 days.
Serve chilled, topped with pecans, walnuts, grated carrot, and/or raisins.
